Day 28: Cherokee, NC

After the crazy driving day yesterday, we stayed close to the campground to get caught up on work and school. The time difference meant we still had bonus morning adventure time, so we snuck out for a hike to Mingo Falls. It was only a half mile from the campground, but unfortunately it was along a narrow, windy road, so we had to drive to the trailhead.

Nicholas discovered the largest acorns we have ever seen. His collecting made for a slow walk back down the trail, but it was worth it.

After getting some more school work done we hit the pool, then came back for showers/jammies. The temptation was just too much so we went back out to try out the jumpy pillow. This was SO much fun. I had to get in on the action, and we decided we needed to bring Rob here tomorrow.

We ended the night with end-of-day school calls and my first attempt at an Instant Pot meal while on the road. It was a total flop: raw chicken and overcooked noodles. So glad the broccoli wasn’t in there too. We will give it another try.
