Day 64: SPAM’d up in Minnesota

It’s our final week on the road. Pretty crazy to think how fast the past nine weeks have gone, but we’re excited to get back home now that it is so close. The theme of this final week is long drives, because we gave ourselves fewer days to get home to allow us to better enjoy the stops before now.

Today our goal destination was the SPAM museum in Austin, MN. On the way, we stopped at a Minnesota Welcome Center which happens to be next to the Mississippi River, so we were able to cross it in a new spot after seeing the beginning a handful of weeks ago. Today included our cheapest fuel stop to date, thanks to many discounts on top of the already low station price. Gold star for Rob!

The SPAM Museum impressed us all. It was full of interesting facts, interactive activities, and one employee that frequently sneaks up behind you offering a variety of “spamples” impaled with a pretzel stick. One of the activities was a canning simulation; it got a bit competitive and quality vs. speed had two different winners in our family 😉

So many corn fields on our drive today. Good thing Nicholas has Rob’s back when it comes to driving.

Rob found the best campsite for tonight at Fox Lake Campground. It is so peaceful and quiet, tucked in between a lake, grass, and a cornfield. Tonight’s dinner was SPAM (of course) along with leftover stuffed crust pizza and tater tots (because the oven already had to be on), a true gut bomb we will all be regretting later…

After dinner we took a stroll around the campground and to the cornfield (where we were surprised to see only one ear of corn growing on each stalk). A lakeside sunset was just what we needed to wrap up the evening.
